48. Afternoon break with 'Cheesy Buttermilk Baked Mashed Potatoes'

I wish I could drive somewhere and find a good cafe shop and sits there while sipping a cup of caramel latte, surfing the internet or reading a good magazine. If only. I baked something this afternoon and would like to share my first try of making it. It's really a simple dish.

Cheesy Buttermilk Baked Mashed Potatoes

Here is the list of ingredients you need. It's up to you to follow or not because it's really simple that even a 10-year-old kids can do it. Believe me. Okay, here:

  • Potatoes
  • 3 tbs butter
  • 3 tbs cream cheese
  • 1 tsp salt
  • 1 tsp basil leaves
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1/2 cup buttermilk*
  • 2 slices cheddar cheese
Got all that? Great! Now you may proceed with the steps.
  1. Peel off and cube the potatoes.
  2. Preheat the oven at 190 degrees Celsius.
  3. Boil the cube potatoes in boiling water until the potatoes are fork tender.
  4. Drain and transfer your potatoes into a bowl or mixer.
  5. Add butter, cream cheese and seasonings into the bowl and mix on low to combine.
  6. Add buttermilk and continue mix until smooth.
  7. Transfer the mix into desired baking dishes (oven safe) and top with cheddar cheese.
  8. Bake for 10 minutes and ready to serve.

* If you doesn't have buttermilk, you may substitute with milk+lemon juice.

47. five minutes photograph session.

While preparing for my sister's wedding, I snap some photos of Alya, my cousin. She's 6-year-old but she sure knows how to pose. Aghh kids these days. There's nothing they can't do! The photography session only lasted for only five minutes lol. I also managed to ask Amir, Alya's younger brother, to pose too. He's a year younger than Alya. Anyway, here are the pictures taken. They are cute, aren't they?

And here are some extra shots. It's a flower used to make the 'dulang hantaran'.

46. I'm back


Hey guys! I'm back! Weehooo. 3rd semester ended a week ago and so I have a lot of free time at home. I will continue with my driving lesson and take the test by this month or else I'll have to postpone another few months to have a license. Then, I will start doing a mini project. What kind of mini project? Hmm, I'm not sure lol. But I do want to make one at least. This is just a short post because I'm rushing. Will update more later. Dadaaa~
